About Pitts & Spitts
Pitts & Spitts was founded in Houston, Texas in 1983. They are one of the first companies to commercialize the off set smoker pit. They have been a large legend in the BBQ business for over 30 years and a couple years ago they began making their wood pellet smokers and grills. They have been mixing Texas tradition with new world techniques to consistently produce the ‘Best looking, best cooking BBQ pits in the world.’
How does a wood pellet grill work?
A wood pellet grill is a lot like a convection oven but instead of cooking with gas or electricity you are cooking with wood. These hard wood pellets can come in various flavors such as oak, misquote, or maple and they can provide delicious flavors to your meats. The wood pellet smoker is a pretty simple apparatus and just a few components that make everything happen. You have the auger, the blower fan, the auger motor and the hot rod.
How it works: Fill the hopper up with your flavored wood pellets. The wood pellets are fed down the auger by the auger motor into a cup. That cup is the hot rod and it will heat up to light the pellets. Once the pellets are lit the fan will turn on and feed the fire. This is how you can control your temperature and heat. The RTD Prob sets and holds the temperature you want.
What is the algorithm on the controller? How well does it hold it’s temperature?
Pitts & Spitts uses a PID controller and that controller is able to help a very tight temperature range. If you set your smoker to 270 or 225, the temperature will stay within a couple degrees of that set temperature.
The Pitts & Spitts difference
To start Pitts & Spitts is the only wood pellet smoker and grill that is made in Texas. They are one of, if not the only, fully welded wood pellet smoker on the market. A lot of other smokers out there are held together by pop rivets and sheet metal screws and can rattle a lot when moved. Their roll top lid makes opening and closing the grill easy and when the lid is closed you still have workable space on the front shelf. The entire smoker is made of 304 marine grade stainless steel which means it will last a life time and rusting will not be an issue.
Other great features
Functionality was very important to the Pitts & Spitts team when designing this grill. Their top and bottom grates slide out easily and allow you to work over the smoker and grill without being in the fire. They provided a place for your grilling tools to hang on the front along with a paper towel rack, which is something you don’t always see. In a smoker air flow is extremely important and to help provide the best air flow they have their traditional rain cap. This cap increases drafts in the grill to provide you with cleaner and more efficient interior for cooking. Down on the grease drain there is a brass ball valve that can be opened or closed to give you even more air control.
Can you grill on this?
The answer is YES! With the standard drip pan you can heat the grill easily to 475 or 500. If you are wanting to go even hotter to get to those siring temperatures they can provide what they call a trap door trip pan. This drip pan has a 7″x7″ door cut out that when removed lets you get to those really hot temperatures.
