
Cooking Simplified with Chef Garth
From a weeknight meal for the family to a cocktail party for 30, timing the preparation will ensure a delicious dinner, a clean kitchen, and a happy host.
Menu Planning Choose only one menu item that needs to be done last minute such as the attached recipe for Texas Fried Rice.
Create a timeline Write a simple timeline. This way even a few glasses of wine won’t get in the way of a well executed menu! For example:
Thursday
Cook rice; make sauce base; blanch, shock & wrap broccolini.
Friday
- 6:00 Heat Wolf grill on high or Wolf griddle to 450 degrees and Wolf oven to 350 degrees Convection (NOT Convection Bake).
- 6:30 Sear beef; heat reduction and add butter.
- 6:45 Beef in oven, broccolini in oven, and fry rice.
- 7:00 Place rice on plate with broccolini at diagonal on top, drizzle sauce around rice, and place beef on top of rice and broccolini.
