Sous-Vide method of cooking has been around for ages, but it was used only in high-end gourmet restaurants. Thanks to professional cooking show on TV more people have learned about sous-vide, it’s benefits and are starting to use this cooking style in their own homes.
Sous-vide really sounds a lot harder than it is. At a fundamental level, sous-vide cooking is a process of sealing food in an airtight bag or container and then cooking that food in a temperature-controlled water bath. The key is to cook the contents evenly, ensuring that the inside is properly cooked without overcooking the outside and to retain moisture.
Here at Factory we have a few different brands that offer some style of sous-vide cooking.
Monogram & CAFÉ
Monogram & CAFÉ have a Sous-Vide Probe that works with specific induction cooktops. This probe uses Bluetooth technology to communicate directly with the cooktop to maintain the temperature you set between 100-200º F. The probe will keep that temperature in the pot or cooking vessel within 1 degree! This precision cooking probe can be used for slow cooking, simmering and advanced cooking techniques like sous-vide.
Signature Kitchen Series
LG’s Signature Kitchen has a 48” range that has the industry’s first built-in sous-vide delivering the ultimate in precision cooking, right on the cooktop. They removed the need for water circulation by engineering a hermetically and magnetically sealed lid, delivering a precise temperature within 1 degree of your set point. They also have an app that allows you to start the process, control the temperature and follow progress from anywhere.
Steam ovens have also come out that allow you to cook sous vide-style without the water bath.
Gaggenau has their 400 series combi-steam oven and vacuuming drawer. The handleless drawer gives you a quick sealing solution with intuitive touch control technology that provide three levels of oxygen extraction and heat sealing. Combine this drawer with Gaggenaus combi-steam oven and you have a perfect match.
Miele also has their vacuum-sealing drawer and steam oven. When the two are installed together you don’t even notice the drawer below unless it is open. The vacuum drawer comes with three suction settings depending on the thickness of your bag. While the Miele steam oven can cover temperature ranges from 113 to 194ºF.
