Cheese Curds or Chunks of Mozzarella Cheese
Regular Potato Fries
3 tbsp. Cornstarch
2 tbsp. Water
6 tbsp. Unsalted Butter
1/4 cup Unbleached All Purpose Flour
20 oz. Beef Broth
10 oz. Chicken Broth
- Prepare the gravy. In a small bowl dissolve cornstarch into water.
- Melt butter in a saucepan over medium heat. Stir in flour and whisk for 5 minutes or until mixture turns golden brown.
- Add chicken broth, beef broth and cornstarch mixture. Stir and bring to a boil. Reduce heat to a simmer for 3 to 5 minutes. Sprinkle in pepper and keep warm.
- Cook fries and pour them into a large bowl. Sprinkle with salt. Layer gravy and fold in cheese. Serve immediately.
